I had a thought today as I was rolling through the Trader Joe’s parking lot: Does anyone else hear “Welcome to the Jungle” playing in their head while trying to find a place to park? That place is a circus! I also wanted to make sure to note that my youngest son has some pretty major food allergies (we are talking anaphylactic responses) so I modify a lot of these recipes to work for him. I just wanted to throw that out there in case you are thinking you can’t use a certain recipe based on ingredients. I’ll try to give you those notes with the meal plan ideas as I remember them! POTATO SOUP WITH CRUSTY BREAD
Here is an example of a recipe where I use the substitution of coconut milk instead of regular milk. Honestly, even if you don’t have a milk allergy you should try this. It tastes better in my opinion! I sub out a can of coconut milk that has been in the fridge overnight (that’s the trick to CHEAP coconut cream). SLOW COOKER BEEF RAGU WITH MASHED POTATOES
This reminds me of a beef stew, but I am hoping for something more than that! I love that it incorporates pomegranate juice. If you have red wine you could use that as well. Use your leftover potatoes from the soup to create mashed potatoes for this to pour over. Recipe here: Slow Cooker Beef Ragu
MEATLOAF WITH VEGGIES OR MASHED POTATOES

COCONUT CHICKEN CURRY

HOT DOGS WITH CHIPS (but I’m sharing a tip)
I know! So adventurous, right? Let’s be honest, I won’t be home in time for dinner on Tuesday so someone else has to cook. The boys love hot dogs so hot dogs it is! Here’s a little tip for how to make the best hot dog: Cut them in half ALMOST all the way and cook them opened on a skillet with butter. Just use tongs to flip them. This is the way the boys prefer them! Eat them normally in a hot dog bun with your toppings of choice.
