For those of you unaware of my other job, it is a school counselor for a high school. We are about to enter registration season and my primary role is about to become transition counselor for 8th to 9th graders. What this means is that these meals are going to become less and less complicated as my hours of work per week will be doubled with all of the nights involved. SPAGHETTI WITH MEATBALLS
I don’t overcomplicate this. I buy frozen meatballs, I don’t make my own pasta or marinara! No recipe needed!

BURRITO BOWLS
I probably won’t be using a recipe. This is one that I just cook up the meat and then get the toppings ready. It’s a great way to have a “taco night” without having tacos. Again, I could eat a taco everyday of my life, but the rest of the house is revolting. Burrito Bowls Recipe
