There may have been some tears (from me) over dinner last week. Making enchiladas is never something I want to do. Don’t ask me why, but I hate it. It is sort of like making lasagna. I think it is just too tedious for me. I also hate having to warm up every single tortilla before you can wrap them up (or they break). I’m really not trying to complain, I am just offering a little normalcy here!

Mongolian Ground Beef

Breakfast FoR Dinner
I guess I was feeling rich because I definitely have 2 dozen eggs in the refrigerator. I am not quite sure how that happened, but we definitely used them up! I made eggs, biscuits, and bacon. My new favorite way to make bacon is in the oven. I realize that isn’t revolutionary, but maybe you haven’t tried it yet!
