It’s the week before spring break here and I am so ready! Next week I will likely not be planning meals since things will look a little different.
GRILLED CHICKEN TENDERS WITH ASPARAGUS
I made extra marinade from last week so I wanted to use that up. It is literally the best marinade for chicken! If you are not a big chicken fan, you need to try it.
For the Marinade:
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar
- 1 1/2 tablspoons Dijon Mustard
- 1 tablespoon lime juice
- 1 teaspoon minced garlic
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Place your chicken tenders in a ziplock bag with the marinade overnight. If you are looking for a great way to cook asparagus, I love this one from Tidy Mom!

ONE POT ENCHILADAS
Every time I make these I think I am going to just use tortilla chips versus crisping up corn tortillas. Every time I never do it and I am thankful I don’t! It is worth it. ONE POT ENCHILADAS
OVEN FRIED SALMON CAKES AND SWEET POTATO FRIES
If you have never tried a salmon cake, don’t count them out! My grandmother used to make them all the time and she lived to her 90s! I will pair mine with frozen sweet potato fries. OVEN FRIED SALMON CAKES
FROZEN PIZZA AND CESAR SALAD
I am really enjoying all of the frozen pizza varieties at Trader Joes, but you could pick your favorite. I also always pick up the bag salads. They are easier and just make sense for us.
