Here in Western North Carolina, the weather has gone from fall to winter in the blink of an eye. Don’t worry. In another day that will all change and then it could change back an hour later. Truly, it is beautiful here, but the weather is unpredictable. So far it has been nice to see the fall weather that has come our way as well as all of the beautiful leaves that have changed. When all of this starts happening I start my craving for everything pumpkin. I know, so many people have made pumpkin a “trend,” but for me, it has always been a favorite.
I can remember growing up just waiting for Thanksgiving and fall so that mom and my grandmother would start baking up the pumpkin goodies. When I started working in the school, I had parents who knew of my obsession that would bring in delicious pumpkin rolls and much, much more! So, of course I love to add pumpkin to my coffee. International Delight makes a delicious Pumpkin Pie Spice creamer that makes my boring coffee so festive. Besides, it’s nice to have a change from my trusty friend, French Vanilla.
What I truly enjoy with my Pumpkin Pie Spice coffee is great baked goods. Today I am sharing with you a super simple Pumpkin Chocolate Chip Bread recipe that is extremely moist and delicious. This is always a hit with the faculty at school as well as my kids. The best part is that you only need a few ingredients to pull this one off.
PUMPKIN CHOCOLATE CHIP BREAD RECIPE
Ingredients:
- 1- 18oz can pure pumpkin
- 1- box of spice cake mix
- 1- cup of water
- 1- cup of chocolate chips
Instructions:
- Pre-heat oven to 350 degrees
- Mix together all of the ingredients
- Spray a bread pan with non-stick spray
- Pour the mixture into the pan evenly
- Place in the oven for about 30-40 minutes
- Let it cool for about 20 minutes
Now you have a super simple pumpkin recipe to share over your warm cup of coffee. I hope you enjoy this one as much as we do.

I love pumpkin bread and I love chocolate so I am going to try this! When I saw the International Delight I thought that was going to be in the recipe and thought GENIUS. I started thinking about all the things I can use it in for a replacement. So although it wasn’t in there (I do love it in my coffee) I know have creations in my head LOL
