With the CDC now recommending all of us to stay home and avoid grocery stores for the next 2 weeks due to quarantine, you may be looking into a slightly empty fridge. A simple pantry meal might be the way to go. Below I am sharing my Pinterest Board where I have been collecting simple recipes that could easily use up pantry items and help you plan meals. Most of them are allergy friendly as well since we have dairy, wheat and egg allergies.
How-To?
The key, when planning to clean out your pantry for meals is to first take inventory of what you have. If you are low on non-perishables, you may want to stock up on those now and get enough to plan on staying home (hunkering down) for about 2 weeks. Things like rice, noodles, canned vegetables and fruits, canned sauces, and peanut butter can really help you stretch things out and make simple meals.
Once you have taken inventory, see what you can mix and match from what you have that is perishable. I made a list that uses up my more perishable items first and then will move to canned items for week 2. Below is my meal plan for the next 2 weeks.
2 Week Quarantine Meal Plan with Links
Keep in mind, one son has severe dairy allergies, so anywhere you see cheese or dairy I either leave it out or use a substitute.
Day 1: Chipotle Burrito Bowl (Rice bowls are great ways to think about pantry meals.)
Day 2: Spaghetti (you will notice this 2 times because I have noodles I need to use up as well as frozen ground beef)
Day 3: Beefy Stuffed Sweet Potato (the boys love these)
Day 4: Greek Chicken Rice Bowl (subbing out for canned, diced tomatoes)
Day 5: Slow cooker Chicken Tacos
Day 6: Hamburgers (I have several patties I already patted out and froze. Here’s a video on how to freeze ground beef.)
Day 7: Steak with red potatoes (again, another bulk meat purchase that is frozen and a large bag of potatoes will keep for 2 weeks)
Day 8: Spaghetti (Noodle clean out. You could easily make this Alfredo and add broccoli)
Day 9: Pineapple Chicken Rice Bowl
Day 10: Burgers
Day 11: Cream of Mushroom Chicken and Rice
Day 12: Steak with Red Potatoes
Day 13: Eggs/Pancakes/Hash browns/bacon
Day 14: Chicken Sausage with Red potatoes (I buy the Alfresco chicken sausage and it is delicious)
I hope you all are staying home and staying safe. I know it is definitely not easy, especially for those of you who are trying to work from home and help your kids with school work (I’m right there with you). My hope is that this little post brings you some form of sanity over the next few weeks. Love you all!
