Summer can often take us in 14 different directions at once. Yes, it is a time of relaxation, but we also find ways to fill our days and weeks that can start to become time consuming. I think it really started to hit me when last week Graham said, “Mom, we’ve eaten fast food twice this week. We really need to stop.”
We generally live a healthy lifestyle that involves fresh foods (for the most part) and a lot of outdoor activity. However, when we are on the road it is easy to just stop into a fast food establishment in order to fill hungry bellies.
What I have learned from all of this is that it is better to fuel them up before we hit the road and take healthy snacks with us in the car. One way I make sure to keep them full longer is by offering plenty of protein and fiber. My youngest son, Davis, has a dairy intolerance of some sort and we have to be very careful. We aren’t talking full on ER visits, but it can get hairy at times. I do rely upon things like oatmeal, different types of fiber bars and eggs (eggs seem to be good for him). We also rely upon almond milk.

Watermelon-Basil Summer Drink Recipe
Ingredients:
- 2 cups watermelon, sliced
- 1/4 cup Silk® Protein + Fiber Almondmilk Blend
- 3 basil leaves, chopped
- 1 1/2 cups cubed ice
Preparation:
- Add all of the ingredients to a food processor.
- Blend well until you have small chunks of ice left.
- Pour into glasses and serve immediately.
- Enjoy, re-hydrate and re-energize!
The great part about this recipe is that it allowed us to add one more idea to our cool treats list by pouring it into popsicle molds! What a perfect way to end a joyous day splashing in the pool.
