I am back with the meal plans! Thank you for hanging in there with me. It has been a crazy few weeks at work in this transition/registration season. This week is brought to you primarily by Brunch with Babs! I’m kidding… sort of. I just love her weekly rotation ideas and incorporated some of those. SHEET PAN FAJITAS
This is one of Brunch with Babs weekly rotations. If it can be a one pot or sheet pan meal I am all for it! You could pair this with tortillas or without. I like the quinoa tortillas from Trader Joes. SHEET PAN FAJITAS.
ONE POT PASTA AND BROCCOLI WITH CHICKEN
Babs’ version of this doesn’t call for chicken, but I am going to add it in because I live in a house of boys! I will take Davis’s out before adding in the cheese. I think I am most excited about this recipe! ONE POT PASTA AND BROCCOLI.
SALAD WITH THE BEST MARINATED CHICKEN AND DRESSING
For the Marinade and Dressing (double this recipe or make it twice)
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar
- 1 1/2 tablspoons Dijon Mustard
- 1 tablespoon lime juice
- 1 teaspoon minced garlic
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Add you chicken (I like to get tenderloins) to a ziplock bag with the marinade. Refrigerate over night or for a few hours. Grill or pan fry your chicken and then cube for the salad. Serve over your favorite type of salad ingredients (I like romaine lettuce, tomatoes and shredded carrots). Make another batch of the marinade/dressing and pour over the top of your salad!
I have no recipe for this one. I use cubed chicken, teriyaki sauce and whatever veggies I have on hand. I also cook up some rice and use the Yum Yum sauce!
Hamburgers and chips! We like to make these a little more fancy by using brioche buns!
