What’s For Dinner This Week? January 10-16

Hey there! This post came out of me posting so much in Instagram Stories and forgetting I actually have a blog for all of this to be in one space. Several people mentioned that it would be helpful to have a list of what we are having for the week and here I am telling you all about it. I promise these will never be fancy. Also, I do not decide what day I am doing what. I just make sure I have enough for the week planned out. If I have a day that is crazier than another then I will choose one of the quicker recipes.

HOW DO YOU MAKE YOUR MENU?

I believe in saving as well as keeping things simple! On Saturday or Sunday I will go through my cabinets and see what I have on hand. From there, I will visit Pinterest or just Google for recipes that include some of those items. For instance, I just did a huge fridge clean out and realized I have 2 bottles of BBQ sauce. So, we are having BBQ this week!

WEEKLY MENU

Slow Cooker BBQ– I have used many different variations, but this is one that I most closely follow. Crock Pot BBQ Pulled Pork

Homemade Sloppy Joes– Again, lots of variations on this, but this one is close. Homemade Sloppy Joes.

One Pot Enchiladas– These are so simple and delicious. You could always sub out making your own corn tortillas for regular corn chips. One Pot Enchiladas.

Teriyaki Chicken with Veggies and Rice-

You will need:

diced chicken

diced onion

diced brocolli florets

diced carrots

teriyaki sauce

Instructions:

Cook up your veggies first. After about 5 minutes add some teriyaki sauce to them. Be careful to just add a dash or it can become too salty. Remove your veggies from the pan or push them to the side and add your diced chicken. Cook the chicken for about 3 minutes and then add Teriyaki sauce. Contine you to cook the chicken until it is done (about 8 minutes total). Add your veggies back in. Serve over rice.

Frozen Orange Chicken from Trader Joes– I always like to have on really good frozen meal on hand for super busy days. The boys really enjoy the Orange Chicken from Trader Joes!

I typically only plan out 5 meals because we will sometimes go out for dinner on the weekends or maybe even have a “cereal” or “sandwich” day!

I hope this helps give you a few ideas moving forward.
