Make sure you are following me on Pinterest and find the Weekly Meal Plan pins. As always, look around your house to see what you already have on hand that may work in some of these recipes. You may even be able to sub for things you have on hand. I have to avoid several allergens and modify many of these recipes in order to make them work for us.

INSTANT POT RAMEN

I have made this recipe twice and both times I have loved it but thought, this is super involved for ramen! However, if you love traditional ramen then this is a great one to use. I also appreciate the shredded chicken. A tip would be to use baby bok choy versus regular bok choy. Also, if you have tips on how to de-shell a soft boiled egg please share them! SLOW COOKER PORK VERDE ENCHILADAS

Taco Tuesday was getting old (not for me but for others) so I have been trying different Mexican dishes on Tuesdays just to add some variety. This recipe calls for your slow cooker in order to create shreddable meat. This recipe will also take a little modification for allergies. I will create most of them as the recipe calls and leave the cheese out of Davis’s and cook in a separate dish. SLOW COOKER PORK VERDE ENCHILADAS

HONEY GARLIC CHICKEN STIR FRY

Stir frys are great ways to have simple, healthy, cost effective meal. Whenever in doubt, stir fry it out! HONEY GARLIC CHICKEN STIR FRY

BURGERS AND CHIPS

Davis has voice lessons on Monday nights so it is typically easier to have a quick meal or something that requires no thought. Burgers it is! Every one loves it and there are never complaints. Elevate your burgers by using brioche buns!

TRADER JOE’S ORANGE CHICKEN

If you thought you would only see this once you were sadly mistaken! Ha! This is another recipe that no one complains about and inevitably there will be a night when I just refuse to cook! Frozen Orange Chicken for the win. Also, if I see it in stock at Trader Joe’s I always buy it. This bad boy is notorious for being bought up in a flash. I believe it is one of Trader Joe’s most sought after items. If you don’t have a Trader Joe’s then I have used this recipe before: SLOW COOKER ORANGE CHICKEN
