Nutrition is the hidden killer of over 2 million children world wide. You may look around and see little kids with full tummies, but the reality is many are going home to no food. For some around the world the sweet potato is becoming a saving grace nutritionally speaking. The sweet potato carries a high source of Vitamin A which is so important to growing bodies. That is why ONE is on a mission to make the sweet potato famous and get others on board with helping support the cause. Here are the facts:
- In 2050, 7 out of 10 people will live in a country that doesn’t produce enough food for its population
- 1.3 billion people make less than $1.25 per day, two-thirds of them in rural areas
- 165 million children were stunted from chronic malnutrition in 2011
- 2.3 million children died in 2011 due to malnutrition
What can you do? You can start by asking World Leaders to end chronic malnutrition for 25 million kids. It is simple to sign the petition over at ONE.org. While you are there you can check out the sweet potato recipes or even purchase a Sweetie Pie ONEsie for your little one to help in the efforts.
In honor of #SweetPotatoLove, I wanted to share with you one of my favorite sweet potato recipes from one of my favorite recipe books, The Muffin Tin Chef. I changed it up a little to use the items I had around the pantry. This brownie adds a little kick!

I’ve also heard that you can put mashed up black beans in just about any brownie recipe. I did that once. My kids gobbled it up. My husband didn’t like it. Maybe if I used 1/2 a can instead of a whole one.
