Fresh Raspberry Vinaigrette Summer Salad Recipe #KraftRecipes

DisclosuregraphiccompensationJuly around WNC is usually pretty hot!  It is right about this month that I start to prefer all things fresh in my diet.  Cool fruits and vegetables serve as snacks and the main course around here lately.  We are so blessed to have a pot full of fresh herbs as well as a garden bursting forth with spinach and tomatoes.  All of this lends itself to yummy salad recipes that the boys are proud to eat because they helped grow it all.

Raspberry Vinaigrette Recipe

Some of the best ways to get kids to eat salads is to make sure to add plenty of color and maybe even a fruit or two.  Sine July is National Blueberries Month, I thought tossing a few of these into the mix would take the salad up a notch.  Of course, finely shredded carrots and a touch of onion gives the salad even more color and flavor.  I also usually like to add a bit of protein to a salad.  Chicken would be great in this one, but I also love to add nuts.  Pecans are usually my go-to, but walnuts would also be delicious in this salad.

For the dressing, we made our own using the GOOD SEASONS Cruet Kit.  I love this thing because it gives lines for where to fill the specific ingredients as well as handy recipes for some of your favorite salad dressings on the back of the box.  Some of the recipes call for using the GOOD SEASONS Salad Dressing Mixes and others simply require ingredients that you probably already have in your cabinets.  Either way, you have a great dressing that you made yourself!

    My 6 year old loves salad like me. We can both eat lots of salad, but my youngest needs some convincing. I like the idea to add color. Thanks for sharing

    Bring on the blueberries! 🙂 I actually have a spinach salad that is amazing with raspberry vinaigrette. I’ll have to add blueberries instead of apples, just for fun this next month.

    This sounds really good! I love salads and am always looking to try and light and fruity dressing. I have never had blueberries in my salad but have tried strawberries and absolutely loved the tang.

      I will be very curious to follow any research in this area. I had a high-risk pregnancy with many ultrasounds beginning as early as 12 weeks. Nik was born at 27 weeks and spent nearly 7 months in the NICU. During that time, he had very frequent cranial ultrasounds to follow his brain development. He has multiple ne/pllogicaludeveoormental issues including autism.

    I had an interesting discovery this past weekend. I don’t hate fresh blueberries as much as I thought, I actually kinda liked them. I just don’t like cooked ones. Anyway… That salad looks really good. 🙂

    I love salads and I also love The Good Season kit for making your own dressing. It is so much better than the bottled version. I love walnuts in salads so I would probably use those.

    My husband has been looking for a good vinaigrette for this diet that we’re doing. The fact that he loves raspberries will probably mean that he’ll love this one. I’m going to click through to the recipe to have for later and make sure to pick up a pack of Italian Dressing Kit next time I’m at the store 🙂
